DALRIGH SINGLE GRAIN

Our journey into showcasing the great flavours and aromas that single grain whisky can deliver is in our DNA as brewers. Used to using a variety of cereals to create differing flavours, aromas and mouthfeels.

Barley, wheat, oats, rye have all been used successfully over the years to create a number of award winning beers and we will take those recipes to create washes and whisky from the likes of imperial reds and stouts, wee heavies, barley wines and baltic porters.

​

All creating unique new make spirits to be married together with a variety of casks and released in limited numbers.

​

We also look forward to bringing our lowland rye to the world utilising a variety of rye malts.

Field of the King

Our single grain offering takes its inspiration from the land that surrounds us.

​

Brewing and distilling on the former garden grounds of the Bruce, our Dalrigh (translates as Field of the King) brand is reserved for our single grain whisky which we firmly believe deserves as much love and attention as our single malts.

Scotch & Rye

You.can't really talk about single grain whisky without a nod to rye. A long forgotten whisky style, now in a bit of a renaissance thanks to a small number of great Scotch distilleries breathing life back into this amazing whisky style.

But in our typical artisinal style we will look to small release batches utilising more than one style of rye malts including crystal and chocolate rye as well as the more traditional malt.

Alechemy

Our single grain releases will also focus on a series of amplified beer recipes as we take these complex malt bills as our washes. Imperials stouts, imperial reds, barley wines, wee heavies, scotch ales all producing completely unique spirits with some really exciting wash-making collaboration with some of the worlds coolest breweries.

Use of the wood

As we continue to source the best wood matches for our new make spirits, we too will be creating a number of new finishes to our wood as we cross pollenate between rum maturation and barrel ageing stouts and imperial red beers.

Creating a whole host of wood finishes to the countless new make options from our many single grain recipes.
