OUR CRAFT

We founded Levenbank Distillery to elevate the appreciation of Scotch whisky by producing exceptional spirits reminiscent of traditional craftsmanship, with our many years experience of barley and yeast as one of the most awarded breweries in Scotland in the last decade.

We are firm believers that the finest whiskies originate from high-quality ingredients, utilising time-honoured techniques that prioritize character and flavour over quantity.

Our lowland distillery sits in the shadows of distilling giants of the past as we marry traditional techniques alongside our brewmaster washmaking innovation to create flavour forward spirits that will blossom into single grain and malt whiskies to be enjoyed the world over..​

THE WATER

Our lowland distillery receives its water from a highland source. Glen Finlas up in the Luss Hills on the west shore of Loch Lomond serves as our water supply and has been the backbone for our many award winning beers over the years.

The perfect canvas from which to craft our art of washmaking distilling and maturing our whisky.

​​

THE BARLEY

Harvested and malted in the lowlands of Scotland and just a short drive from the distillery.

​

We will create our wash from a variety of kilned barleys from pale ale through crystal and finally chocolate and roasted malt.

​

Each malt playing its own part in delivering our flavour forward new make spirit. Not bound by yield, we will focus on quality of wash and let the distillation cuts and time do the rest.

OUR YEAST

As brewers we have worked our wonders with dozens of different yeast strains over the years.

​

Our single malts will benefit from a flavour forward and consistent yeast choice, but look forward to a number of single cask expressions that will feature a variety of different yeast strains to create a number of outstanding new make spirits.

​

The single grain options are countless as we look to replicate a number of craft beer recipes into our washes and distill with amazing flavours coming forward.

THE MASH

Our one ton mash that we share with the brewery is ready made for the washes that we wish to make.

​

Our carefully weighed out and milled grains will mix with the hot water to release all the sugars and flavours needed for the partnering yeast strain to get to work.

​

Capable of handling a variety of grains and cereals including, rye we have the flexibility needed for our signature and single cask releases.

FERMENTATION

Our fermenters or washbacks will give us year round control whether we are looking for low and slow or a supercharged quick fermentation depending on style of wash and new make we wish to create.

​

Accommodating both clear and cloudy worts from our mash tun to help us deliver a range of new make spirits from light and fruity to more robust new make with richer, heavier notes.

​

DISTILLATION

Our 1250 litre wash still and 950 litre spirit still were designed to give us the flexibility we are looking for within our new makes and to allow for a triple distilled option.

​

Lots of copper contact and even a copper spirit safe these stills could produce over 80,000LPA but will start at a more gentle pace in the first couple of years.

MATURATION

We are working with award winning cooperages Alba and Speyside.

​

We have carefully selected one type of cask for maturing our three new make spirits.

​

BOTTLING

Our bespoke bottle representing time will feature throughout our entire range including single malt, single grain and other releases.

 

Bottling will be non chill filtered with no artificial colourings.

​

A limited run of single grain bottles will feature in 2029 to remember The Bruce, 700 years from his death a stones throw from our distillery.
